Notes is for the free-form record — phone summaries, strategy, chronologies, impressions — the context that matters but doesn't fit a fixed field.

Where Documents holds files you produce or receive, Notes holds text entered directly into Thistle, often during or right after an event. It captures what would otherwise be lost in email or on loose paper.
